What survives the MOV to MKV move: everything
H.264 and HEVC, the codecs found in nearly all MOV files, are both fully at home in MKV, so this conversion is a remux: streams are transferred as-is, in roughly the time it takes to copy the file, with no quality change and no meaningful size change. That low cost is what makes the migration realistic to fold into an ingest routine, converting each batch as you offload cards rather than facing the whole library at once. The MKV container also leaves headroom the archive will appreciate later, since the format can carry added subtitle tracks, extra audio, and chapter markers alongside the original streams.

Lossless remux vs re-encoding
MOV and MKV are containers — what matters is the video codec inside. When the codec already fits MKV, this tool just repackages it (a "remux"): instant and completely lossless. Only when the codec isn't compatible — most often anything involving WebM — does it re-encode the video locally, which takes longer and is where the quality preset applies.
