From a camera-roll MOV to an MP3 you can actually send
MOV is what piles up on Apple devices: iPhone camera footage, QuickTime screen recordings, and clips from Canon or Sony cameras that shoot MOV. Quality expectations for the AAC to MP3 step
MOV audio from phones and screen recorders is AAC, so this conversion re-encodes lossy to lossy. Keep 192kbps as the floor for speech; go to 256kbps when a music performance or room ambience matters, since stacked lossy generations show up there first. If nothing may be lost at all, extract to M4A instead and skip the re-encode entirely.
Mind the input size too: three minutes of 1080p iPhone video already approaches 200MB, the comfortable ceiling for in-browser work. Trim a long recording to the relevant segment on the phone before converting it.

Lossy vs lossless audio
WAV and FLAC are lossless — they preserve the original waveform exactly (FLAC is compressed, WAV is not). MP3, M4A (AAC) and OGG are lossy: they shrink the file by discarding inaudible detail, and the quality preset controls the bitrate. Converting a lossy file to a lossless format can't recover quality that was already lost. One special case: converting to M4A when the source is already AAC just repackages the container (a lossless remux) — instant and bit-exact.
