WAV is the restoration format for audio trapped in AVI captures
When the goal is cleanup rather than playback, extract to WAV. Tape hiss, hum, clipped peaks, and uneven levels are all easier to fix in Audacity or a DAW when the material arrives as plain PCM, because every noise-reduction and leveling pass then works on full-resolution samples instead of a compressed stream.
This is the standard first step for digitized recordings: pull WAV from the captured AVI, repair it, then export whatever delivery format the project calls for. The WAV also doubles as your working master, so later exports never depend on the aging AVI again.
PCM, MP3, or AC3 inside the AVI: what WAV extraction changes
DV captures store audio as uncompressed PCM, typically 48kHz 16-bit stereo. In that case the conversion is a rewrap: the same samples move from the AVI container into a WAV file, and quality is untouched by definition. If the AVI instead carries an MP3 or AC3 track, the stream is decoded to PCM. Nothing new is lost, but WAV cannot restore detail the original lossy encode threw away, so judge the source by ear before investing hours in restoration.
Budget disk space accordingly: stereo WAV runs about 10MB per minute at 44.1kHz and 11MB per minute at 48kHz. On the input side, raw DV video moves at about 3.5MB per second, so long transfers should be cut into clips of a minute or so, while AVIs compressed with MPEG-4 codecs fit 20 minutes or more within the 200MB range.
How to use it

Lossy vs lossless audio
WAV and FLAC are lossless — they preserve the original waveform exactly (FLAC is compressed, WAV is not). MP3, M4A (AAC) and OGG are lossy: they shrink the file by discarding inaudible detail, and the quality preset controls the bitrate. Converting a lossy file to a lossless format can't recover quality that was already lost. One special case: converting to M4A when the source is already AAC just repackages the container (a lossless remux) — instant and bit-exact.
