MOV to M4A keeps iPhone audio in the Apple lane
Shoot a video on an iPhone and the valuable part is often the sound: a rehearsal, a lecture, a kid's first sentence. The MOV stores that sound as AAC, and AAC is exactly what an M4A file contains, so extraction hands you the recording's audio with quality untouched. The result plays natively on iPhone, iPad, and Mac and imports cleanly into the Music app or an audio editor.
It is the natural round trip for people who record on an iPhone and stay on Apple hardware: the video stays in Photos, the audio lives on as a compact M4A.
M4A for fidelity, MP3 for reach: deciding from a MOV
Choose M4A whenever the receiving side is modern or your own: identical quality to the source, and typically a smaller file than a comparable MP3, since the AAC track (roughly 100 to 200kbps on iPhones, about 1MB per minute) is carried over instead of being re-encoded at 192kbps or more. Choose MP3 when the destination is unknown, old, or standardized on MP3, such as aging car USB ports.
Note that some dedicated cameras write PCM audio into MOV instead of AAC; for those, the WAV target preserves the original samples, while M4A means an AAC encode. And since 4K/30 iPhone footage runs about 170MB per minute, work from trimmed clips of roughly 200MB or less.

Lossy vs lossless audio
WAV and FLAC are lossless — they preserve the original waveform exactly (FLAC is compressed, WAV is not). MP3, M4A (AAC) and OGG are lossy: they shrink the file by discarding inaudible detail, and the quality preset controls the bitrate. Converting a lossy file to a lossless format can't recover quality that was already lost. One special case: converting to M4A when the source is already AAC just repackages the container (a lossless remux) — instant and bit-exact.
